Rolls are a very convenient portioned form of serving dishes. This recipe is a universal dish: ham rolls in wine sauce can be served both as a hot dish with a side dish, and as an appetizer - both hot and cold.
It is necessary
- - 10 thin and wide slices of cooked smoked ham;
- - 500 grams of fresh champignons;
- - 2 small onions;
- - a bunch of parsley;
- - 1 tablespoon of butter;
- - 1/2 lemon;
- - 1 egg (only the yolk is needed);
- - 1 glass of dry white wine;
- - 5 tablespoons of heavy cream (at least 20%);
- - 1 tablespoon flour;
- - 1 teaspoon of ground paprika;
- - salt and ground black pepper to taste.
Instructions
Step 1
Preparation of food
Peel the onion, rinse and cut into small cubes. Rinse the mushrooms thoroughly and dry on a paper towel, cut into small thin slices. Rinse the parsley, dry and chop very finely. Squeeze the juice from half a lemon.
Step 2
Preparation of the filling
Melt the butter in a frying pan, put the chopped onions and fry until transparent. Then add mushrooms to the onion and continue to fry until golden brown. Pour lemon juice over everything and simmer for 5 minutes. Add parsley, paprika, salt and black pepper, mix everything well.
Step 3
Making the sauce
Pour wine into a ladle, add flour and mix thoroughly; so that the flour is well stirred and does not form lumps, the wine must be chilled. In a separate bowl, mix the cream and the yolk, whisk lightly until smooth. Pour the egg-creamy mass into a mixture of wine and flour in a thin stream, mix thoroughly.
Step 4
Formation of rolls
Spread pieces of ham on the table, spread the mushroom filling on each of them in an even layer. Gently twist the rolls, secure each with a wooden toothpick. Put the rolls in a fireproof dish, pour over the prepared sauce. Put in an oven preheated to 200 degrees and bake for 10-15 minutes. Garnish with herbs when serving.
