Sturgeon is a tasty and healthy fish of the sturgeon family, which has an excellent taste and dense meat. Sturgeon dishes are considered a real decoration of the table. This fish can be used to prepare cold snacks, hot dishes, delicious salads.
Sturgeon soup is delicious, for the preparation of which you will need the following ingredients (for 5 servings):
- 500 g sturgeon;
- potatoes - 3 pcs.;
- onions - 1 pc.;
- carrots - 1 pc.;
- 20 ml of sunflower oil;
- 2 liters of water;
- bay leaves - 2-3 pcs.;
- salt, black pepper (according to your taste).
Sturgeon has long been appreciated and considered a delicacy for the quality of white meat, healthy composition and high price. In Russia, the sturgeon was called the tsar fish.
Rinse the sturgeon with cold water, then rub with salt and leave for 10 minutes to disinfect. Pour water into a saucepan and bring to a boil, then pour boiling water over the sturgeon. Remove the scales from the fish, cut off the head, tail and fins, cut open the belly and take out the entrails, ridge and all bones. Wash the sturgeon again and cut into portions.
Pour water into a saucepan, put sturgeon and put on low heat. If foam forms on the surface, then remove it with a spoon. Cook the fish for about 20 minutes over low heat. It is not worth making the fire medium or large, because fish broth may be cloudy. After the indicated time, strain the broth, which should be transparent.
Rinse the potatoes, peel and dice, then add to the fish stock. Peel carrots and onions, chop finely and fry in a frying pan in a little vegetable oil until golden brown. Then the fried vegetables should also be added to the broth.
The soup is cooked until the vegetables are fully cooked. Do not forget to salt the sturgeon soup and add bay leaves and black pepper of your choice, as well as any seasoning suitable for making fish soup.
Pour the prepared hot soup into bowls and add the fish. The sturgeon fish soup is transparent, light and tasty. The calorie content of such a dish is 43 kcal per 100 g. Sturgeon contains glutamic acid, so it will have a meaty taste.
You can make delicious sturgeon baked in foil. You will need the following ingredients:
- 1 kg of sturgeon;
- 50 ml of dry white wine;
- lemon - 1 pc.;
- 2 tbsp. l. vegetable oil;
- salt, ground pepper, fish spices (to taste and desire).
Gently gut the sturgeon, then rinse well under cold water. In order to disinfect the fish, it must be rubbed with salt outside and inside and left for about 15-20 minutes. Then rinse the sturgeon again under running water and leave to dry on a paper towel.
Sturgeon for baking should be cut while still alive, because in its intestines there may be causative agents of such a dangerous disease as botulism.
Now the sturgeon carcass must be grated with pepper, salt, spices and seasonings for baking the fish to your liking, then sprinkle with lemon juice and grease with vegetable oil.
Place foil on a baking dish, spread the sturgeon on top and pour with white dry wine, then carefully seal the foil and put the fish in the oven preheated to 170 ° C. It is necessary to bake sturgeon for about 35-40 minutes until fully cooked.
Transfer the prepared sturgeon to a beautiful dish, garnish with lemon slices, parsley sprigs and serve in combination with any sauce.
