Chicken eggs are a supplier of protein and nutrients to our body. Eggs are quite susceptible to improper storage and can become a source of salmonellosis if not handled correctly.

Step 1
When you shop for eggs, make sure the display cases are in a dark, cool place (not near the battery), or even better if the eggs are in the refrigerator. Eggs should be clean on the outside, free from cracks or any dirty spots. At home, immediately transfer the eggs to the refrigerator, in a special compartment designed for them. Avoid keeping them in the sun.
Step 2
If the egg is cracked in transit, break it and pour it into a clean cup to make sure it is not spoiled or has a rotten smell. It is recommended that you cook such an egg right away or put the cup in the refrigerator. But you need to use a broken egg within 2 days.
Step 3
Sometimes village eggs in the markets are sold in sticky mud. Therefore, to avoid contaminating other foods in your refrigerator, simply wipe the eggs with a dry cloth. It is not recommended to wash eggs with hot water before storing.
Step 4
According to sanitary rules in public catering places, eggs should be washed in a solution of baking soda before use, then soaked in a 5% solution of the same soda for 15 minutes, only then washed with clean water.
Step 5
The shelf life of the eggs is indicated on the box. Eggs usually need to be refrigerated for 3 to 5 weeks. Boiled eggs should be kept in the refrigerator for no longer than a week. It is not recommended to store eggs outside the refrigerator for more than 2-3 hours.
