Buns are perhaps the most popular type of pastry for tea, coffee, milk or compote. Lush and aromatic, they are loved by children and adults. The composition of the dough, shape and filling for this type of baking can vary indefinitely, which diversifies the daily and festive menu.
How to make yeast dough
To cook yeast dough buns according to an old recipe, you need to take:
- 1, 1 kg of grit flour;
- 2 bags of 7 g of instant yeast;
- 150 g granulated sugar;
- 2 tsp salt;
- 2 tsp ground cardamom;
- 400 ml of milk;
- 250-300 g of butter;
- 3 eggs;
- 200-250 g of walnut kernels;
- 200 g of raisins;
- 300 g of dark brown sugar;
- 2 tbsp. l. honey;
- 90 g icing sugar.
First of all, make a yeast dough. To do this, combine instant yeast, icing sugar, salt, cardamom and 450 g flour in a large bowl. In a small saucepan or saucepan, heat the milk and 90 g butter to about 50 ° C. There is no need to melt the butter in advance. Using a mixer at low speed, gradually beat the warm liquid into the flour mixture. Then beat in the eggs. Increase the speed of the mixer and beat all the ingredients for another minutes 3. Add 600 g of flour with a wooden spoon and knead into a soft dough.
Transfer the dough to a floured work surface and, gradually adding 80-90g of flour, knead for another 10 minutes, until the dough becomes elastic and smooth. Form a ball out of it, cover with cling film and let stand for 15 minutes.
How to make buns
Prepare the filling for the buns. To do this, melt 90 g of butter in a saucepan. In a small bowl, combine chopped walnut kernels, raisins, and brown sugar with a knife or mortar. Divide the dough into 2 halves and roll each into a rectangle. Then brush them with melted butter and spread the filling evenly on the layers. Roll the dough into rolls starting from the long side of the rectangles and seal the seams.
Then use a knife to cut each of the rolls into 10 pieces. Place the buns on a greased baking sheet, cut side down. Cover everything with cling film or napkin and put in a warm place for half an hour. During this time, the buns should approximately double in volume.
Preheat the oven to 180 ° C, place a baking sheet with the "matched" buns in it and bake them for 25-30 minutes, until the buns are browned.
Next, prepare the frosting. To do this, place a saucepan over medium heat and heat the honey with the remaining 90 g of butter and 100 g of brown sugar in it. The butter should completely melt and the sugar should dissolve. Then pour the cooked icing over the baked buns and cool them on the wire rack. When the baked goods are completely cool, mix the icing sugar with a tablespoon of water and drizzle the mixture over the buns.
