Cheese soufflé is an unusual, beautiful and tasty dish. It is easy and quick to prepare. I suggest trying to make a soufflé according to a simple recipe.
It is necessary
- - hard cheese - 200 g;
- - butter - 50 g;
- - vegetable oil - 2 tbsp. l.;
- - flour - 3 tbsp. l.;
- - mustard powder - 0.5 tsp;
- - milk 2, 5% - 1, 5 glasses;
- - eggs - 5 pcs.;
- - cognac - 2 tbsp. l.;
- - salt - 0.5 tsp;
- - ground red pepper - a pinch.
Instructions
Step 1
Melt butter in a frying pan, add flour and fry it lightly (2-3 minutes). Add salt, mustard and pepper. Pour cold milk into the mixture, bring to a boil and simmer over low heat for 5 minutes.
Step 2
Grate the cheese on a coarse grater. And add in small portions to the hot milk and flour mixture. Stir. The cheese should melt and the mixture should be smooth.
Step 3
Separate the whites from the yolks. Beat the yolks with a mixer and pour in a thin stream into the cheese mass, stirring continuously. Add cognac and refrigerate.
Step 4
Whisk in the egg whites and gently stir into the curd.
Step 5
Grease the molds with vegetable oil, lay out the cheese mixture, filling the molds two-thirds full. Bake in the oven for 40 minutes at 180 degrees, until a golden crust forms on top. Serve hot. The dish is ready! Bon Appetit!
