To prepare boiled pork, you need to take a whole piece of meat and rinse it thoroughly with cool water, then cut off the excess fat around the edges. Then pat dry with a towel and set aside for a while. It is best to do this a day before cooking so that the meat has time to dry out enough.

Step 2

Peel and grate the head of garlic, leave a few cloves and cut lengthwise. Mix the spices and mix thoroughly into flour using a mortar or coffee grinder. Peel and cut the carrots into small cubes so that they have the shape of a parallelepiped. Finely chop the bacon. It must be cooled beforehand. In a piece of meat, make deep cuts and stick in a piece of garlic and carrots, stuff with bacon on top. Grate the meat with a mixture of spices and garlic.

Pour the red wine into a shallow container; an enamel saucepan or ceramic bowl is best. Put a piece of meat there so that the liquid occupies 2/3 of the surface. In this form, leave the piece for one or two days in a cool dry place. In winter, you can take it out to the balcony.

After that, remove the meat from the pan or bowl and place it on a baking sheet, previously covered with parchment paper and foil. Wrap the piece in foil so that it covers the entire surface of the meat completely. Step 5

Pork should be baked at a temperature of 200 degrees, for two hours. The degree of doneness is determined by the smell and color of the liquid flowing out of the meat. To do this, a neat puncture is made with a fork or knife and they see what color the juice is inside. If it is transparent, then the product is ready and can be safely removed from the oven.

Step 6

Put the boiled pork on a large flat dish and garnish with fresh vegetables, pickled mushrooms and plenty of greens. Slice across the grain in large chunks.
