Pork steak with French fries

Ingredients:

- 500 g of pork;

- 50 ml of soy sauce;

- 1/4 tsp. dry mustard, black and red ground peppers;

Thoroughly wash the pork, pat dry and cut into 3 cm thick slices across the grain. Rub the pieces generously with salt and a mixture of mustard and two peppers. Place the meat in a wide container in a single layer and pour the soy sauce evenly over. Close the dishes with a lid or tighten with cling film and put in the refrigerator for 2-3 hours.

Squeeze the steaks from the marinade and place in heated vegetable oil. Saute them quickly over high heat until they are crusty, then reduce the temperature to low and bring the dish until cooked, then 6-10 minutes on each side.

Hamburgers for French fries

Ingredients:

- 300 g of pork and beef;

- 4 rolls;

- 1 tomato;

- 1 onion;

- 1 pickled cucumber;

- 2 lettuce leaves;

- 1/3 tsp ground black pepper;

- salt;

- vegetable oil;

- ketchup or barbecue sauce.

Cut the meat into small cubes, the peeled onion into quarters and mince everything. Stir the minced meat well with pepper and salt, beat a little and refrigerate for 20 minutes. Divide it into 4 parts, shape from each patty, transfer to a skillet with hot vegetable oil and flatten with a spatula. Grill the burgers until tender.

Heat the buns and cut them lengthwise. Collect the burgers in the following order: bread, ketchup, cucumber slices, lettuce flakes, tomato circle, bread. Repeat for the remaining sandwiches.

BBQ chicken wings for French fries

Ingredients:

- 1 kg of chicken wings;

- salt;

For the sauce:

- 160 g ketchup;

- 130 g of sugar;

- 2 cloves of garlic;

- 1 onion;

- 1 tsp coarsely ground black pepper;

- 1/3 tsp salt;

- 2 bay leaves;

- 50 ml of cognac and vegetable oil.

Rinse the wings, season with salt, spread on a baking sheet and bake for 20 minutes at 250oC. Pour sugar into a saucepan, add vegetable oil and put on moderate heat. Bring the mixture, stirring, until brown, then stir in the ketchup. Also add chopped bay leaves, pepper, salt, crushed garlic and chopped onions.

Simmer the sauce for 10 minutes, stirring constantly with a wooden spatula so as not to burn. Pour brandy into it 2 minutes before the end of cooking. Strain everything through a fine sieve. Remove the wings and brush over the sweet-hot gravy using a cooking brush. Return the baking sheet to the oven for another 5-7 minutes.
