Useful properties of shrimp

The main beneficial properties of shrimp, like other seafood, is a large amount of easily digestible protein, vitamins and minerals. Also, these seafood has a good source of omega-3 fatty acids. With the frequent use of these seafood in food, the human body improves hormonal levels, increases efficiency, solves the problem of iodine deficiency and anemia, and also improves the appearance of hair, skin and nails. The calorie content of shrimp meat per 100 grams of product is approximately 98 kilocalories. This figure is low, so shrimp can be included in the menu for those looking to lose weight or on a low-calorie diet.

How to choose quality shrimp?

Today, a large assortment of shrimp is available on the shelves of shops and markets. Their differences lie in the size of these seafood. For fried shrimp dishes, medium-sized crustaceans are best. Large seafood is most often used in salads or served as a separate dish. Small shrimps are mostly boiled. The best options for frying are tiger, black or Atlantic shrimp.

There are three types of shrimp in stores:

  • chilled or frozen;
  • peeled or shell-on;
  • individually packed or by weight.

When choosing seafood, adhere to the following rules:

  1. When buying frozen shrimp in a package, look at its tightness and date of manufacture.
  2. If the package contains a large amount of ice, then the product has been defrosted and re-frozen. This can negatively affect the taste and quality of the finished dish.
  3. If you buy seafood by weight, then pay attention to the head, shell and tail of the shrimp. Damage or pigmentation is not allowed on their shell, and the eyes of crustaceans should not have a cloudy film. Shrimp with black heads cannot be eaten - these are sick or spoiled specimens. Good quality crustaceans have an even, smooth coloration and slightly curved tails.
  4. Chilled shrimp should have a salty, sea-like smell. Third-party and unpleasant odors indicate spoiled goods or improper storage.

Do I need to peel the shrimp for frying?

There are two ways to fry shrimp - with or without shell. The main negative aspect of shelling shrimp is the effect of high temperature on the tender texture of their meat. The shell retains all the beneficial properties of the seafood inside, and the finished dish turns out to be the most juicy and tasty.

Also, the method of preparing seafood depends on the form of serving. When you're hosting a formal event, don't serve the shrimp in the shell. Perhaps not all guests will want to get their hands dirty to separate the shrimp meat from the shell. If you are having an ordinary family meal, then the shell can be left. With any method of preparation, it is imperative to remove the intestinal vein, which is located in the abdomen of the shrimp. To do this, you just need to pick it up with a knife, lift it and pull it out with your fingers.

How long does it take to fry shrimp?

A special advantage of seafood is that it does not require lengthy heat treatment. It should be noted that the time for frying seafood largely depends on the preliminary preparation of the shrimp. Pre-marinated shrimps are fried for 2-3 minutes over high heat, and without marinade - 4-5 minutes. The main indicator of the finished product is a ruddy crust and the release of a colorless liquid.
