Step 1

Find the right stone first. It must have a smooth surface of about 15x15 cm, good thermal conductivity, so that the heat is retained for a long time. As a last resort, you can try to cook on the usual smooth cobblestones that are found on the banks of rivers.

Please note that the thicker the stone, the more time it takes to heat up, but it will keep the heat longer. The optimum thickness is 10-15 cm. You can also cook with two flat stones. In this case, the bottom stone lies on hot coals, food is placed on it, and the top is covered with a second flat stone, also heated. As a result, heat treatment is carried out from both sides at once.

Heat the stone properly so it doesn't crack or split. You can heat in the oven, on the stove, on the fire or in the fireplace. The gradual heating is important, from room temperature to incandescence. In addition, the stone must be absolutely dry, with strong heating of the wet inside, vapor pressure is created and it can even explode.

To cook a lot and quickly, consider constant heating. To do this, you can set the stone on a stand, and put one or two alcohol burners under it. If you can fry on a heated stone for 20-30 minutes, then on such a "stove" you can cook at least the whole day.

If you bought your stone slab from a store, follow the instructions for use. Such stones cannot be washed with harsh cleaning agents, and food for cooking is wrapped in foil or parchment paper without the use of fat.

When the stone is hot enough, brush the surface with grease or oil and lay out the food to fry. Most often meat, fish, vegetables, seafood are fried on stones. You can also toast bread, eggs, sliced fruit.

Cutting food into thin slices will brown quickly and crisp. Large pieces require a longer cooking time, due to the uniform heat from the stone, they are fried evenly throughout the entire thickness. Choose your cooking method, you can try different methods at the same time. To make meat or fish more juicy, pour broth or sauce over them during cooking.
