Pies, cakes, buns and other pastries - all these desserts forbidden for a woman's waist and slender body are always so tempting that we often allow ourselves to arrange a "belly feast" and enjoy amazing sweets.
Harm or benefit of pies
But are pies and other baked goods really so harmful to our body or are they far-fetched myths and, most importantly, just know the measure of their consumption? It is worthwhile to understand this issue in more detail before proceeding with cooking.
Firstly, flour products contain carbohydrates, without which the human body simply cannot work adequately, secondly, by consuming sweet desserts, our brain and the entire nervous system receives the glucose they need, and thirdly, confectionery is one of the the shortest ways to quickly satisfy hunger, if the next meal is not yet soon, and the strength is already running out. Many baked goods also contain a number of useful micro and macro elements, especially if the recipe contains vitamin fillers such as fruits, berries, and dried fruits. Well, and probably the most important thing is a great mood from the pleasure received while eating such tasty treats!
Of course, there is also a downside to the coin. So, with excessive consumption of sweets, teeth begin to deteriorate, extra calories are deposited by additional kilograms on our body, and harmful chemical ingredients and additives that are usually present in store-bought baked goods from unscrupulous manufacturers only have a negative effect on all functioning human systems … Therefore, it is worth once again to spend your precious time and stand at the stove in order to prepare high-quality baked goods with your own hands, without fear for the health of your relatives, and knowing for sure about the presence of only natural ingredients in it.
Classic Zebra pie with sour cream
Such simple baked goods can deservedly be called an ambulance, if suddenly the guests decide to visit you without warning, and there is absolutely nothing for tea. In addition, even a schoolboy can master the technique of making a cake according to this recipe and become your indispensable assistant in any emergency. For the classic "Zebra" you will need:
- granulated sugar - 2 glasses;
- chicken eggs - 5 pcs.;
- sour cream - 200-250 g;
- butter - 200 g;
- wheat flour - 300 g;
- cocoa powder - 2 tablespoons;
- soda, slaked with vinegar - 1/2 tsp.
Step by step recipe:
- Peel the eggs and put them in a deep bowl, add granulated sugar and beat well with a mixer at maximum speed until a white foam forms.
- Sift the flour (the whole amount, leaving only 2 tablespoons on the saucer) through a sieve so that it enriches with oxygen and gives the baked goods splendor, then add to the egg-sugar mixture.
- Melt the butter and cool to room temperature, add to the rest of the ingredients.
- Then add sour cream to a bowl and put soda slaked with vinegar. Mix everything thoroughly and let stand for 10 minutes.
- Divide the dough into two parts by pouring half into another cup. Then add and stir in one part 2 tablespoons of flour, set aside on a saucer, and add 2 tablespoons of cocoa powder to the other. You should get the consistency of not very liquid sour cream.
- Grease a baking dish with vegetable oil and alternately, without stirring, pour the dough into the center: 1 tablespoon of the brown mixture, then 1 tablespoon of the white mixture, until the whole form is filled.
- Preheat the oven to 180 degrees and put the cake on for half an hour. After the specified time, try the dessert for readiness, piercing it with a match in the thickest place: if the match is dry, then you can take the baked goods out of the oven, and if not, cover it with a sheet of foil, reduce the oven temperature and hold for another 10 minutes. As a result, you should get such a "Zebra", as in the photo.
By the way, the design of the cake can be made even more interesting if, after filling the entire form with mass, take a toothpick or a match and draw straight rays from the edge to the center on the surface of the cake. As a result, such a cobweb will turn out.
"Zebra" with sour cream and kefir
You will have to tinker with the cake according to this recipe a little longer, but the result will be very effective and incredibly tasty pastries. The only thing that can upset the adherents of proper nutrition is the calorie content of such a "Zebra", as it will be higher than in the classic version due to the addition of syrup, cream and glaze.
You will need the following ingredients for baking:
- wheat flour - 450-500 g;
- chicken eggs - 6 pcs.;
- butter - 250 g;
- cocoa powder - 50 g;
- granulated sugar - 250-300 g;
- kefir with a fat content of at least 2.5% - 300 ml;
- sour cream - 1 tablespoon;
- vanilla sugar - 20 g;
- baking powder - 10 g;
- salt - 1 pinch;
- baking soda - 0.5 tsp
For syrup:
- granulated sugar - 50 g;
- water - 50 ml;
- vanillin - 1 sachet.
For the cream:
- icing sugar - 100 g;
- homemade or store sour cream with a fat content of at least 25% - 400 ml;
- vanillin - 1 sachet.
For glaze:
- dark chocolate with a cocoa content of at least 70% - 50 g;
- butter - 50 g.
Step-by-step cooking:
- Pour flour into a deep bowl (leave 40 g on a saucer), be sure to sift it through a sieve, mix with baking powder and soda. Soda in this recipe does not need to be quenched with vinegar, since its role will be played by lactic acid contained in kefir.
- Pre-soften the butter, leaving it in a warm place for a while, then in a separate deep bowl mix together with granulated sugar and vanilla sugar. Beat everything thoroughly with a mixer for 2-3 minutes until the sugar crystals are completely dissolved.
- Continuing to beat, add the eggs one at a time. If the mass does not combine to homogeneity, but as if stratified, then it is necessary to add 1 tsp. flour after each egg hammered into the dough.
- Pour kefir into a tall glass and mix with sour cream until smooth.
- Then, alternately in several stages, introduce a mixture of bulk ingredients and fermented milk, constantly stirring the dough. In consistency, it should turn out like liquid sour cream.
- The whole mass must be divided into two parts in separate bowls. Add cocoa powder to one bowl, and add 40 g of sifted flour to the other and mix. If lumps suddenly form, then the batter can be easily filtered through a sieve, grinding thick formations.
- In the recipe, the number of ingredients is indicated in such an amount that you get 2 medium crumpets. Therefore, if you use a not very large form, then you will also have 2 cakes.
- Grease a baking dish with vegetable oil, having worked well the edges, you can cover it with baking paper, and start pouring 2 tablespoons into the center. dark mixture, then 2 tbsp. white dough. When the baking sheet is full, send it to the oven, preheated to 170-180 degrees, for 25-30 minutes. Do the same with the second part of the test.
- To prepare the syrup, you need to pour water into a thick-walled saucepan, add sugar, vanillin and boil. Cool to room temperature.
- For the cream, mix chilled sour cream, vanillin, powdered sugar and beat everything thoroughly with a mixer.
- Cut off the caps from the cooled cakes and collect the pie: first put the crumpet with the cut up, soak with syrup, grease with cream, then cover with the second crumpet so that the cut lies on the cream, soak with the syrup and put the cream. Treat the sides of the resulting cake with cream too.
- Make the icing: melt the chocolate and butter in a water bath, mix them, put them in a pastry syringe and decorate the surface of the cake with strips of icing.
