Pumpkin pie, or pumpkin pie, is a popular American dessert traditionally prepared for Thanksgiving as well as Halloween. The pie consists of an unsweetened shortbread crust and a spicy pumpkin filling that is very pleasant to the taste. Making such pastries at home is quite simple.

Instructions
Step 1
Use well-chilled butter to prepare the dough. Cut it into cubes, add sifted flour and salt, chop into crumbs with a knife.
Step 2
From the resulting mixture, make a mound with a depression in the center, put sour cream and yolk there, and now chop it very quickly with a knife. If the yolk is small and the mass is thick, you can add a couple of tablespoons of ice water.
Step 3
Knead the dough, roll it into a ball, wrap it in plastic wrap and refrigerate for 30 minutes. After the time has passed, remove the chilled dough and roll it into a thin layer on a sheet of parchment paper for baking.
Step 4
Grease a round baking pan with vegetable oil. Place the dough and paper in it so that the paper is at the top. Form dough bumpers. Pour dry beans, peas or cereals onto the crust (so that the middle does not rise) and place in an oven preheated to 180C for 15 minutes.
Step 5
For the filling, cut the pumpkin pulp into pieces and chop with an immersion blender until smooth and smooth. Beat the brown sugar and eggs separately with a mixer until fluffy.
Step 6
Add rum or cognac, cream to eggs and beat a little. Add pumpkin puree, spices and beat again with a mixer.
Step 7
Remove the crust from the oven, pour in the cereal, remove the parchment paper. Place the pumpkin filling on the dough base and place in the oven for another 25-30 minutes.
