Russian cuisine is rich in recipes for many varieties of cabbage soup, a primordially Russian dish that appeared in the mists of time. Among them, one can single out a delicious dish under the interesting name "lazy cabbage soup". They are called "lazy" not because nothing needs to be done to prepare them, but because they are "lazy" cooked for a long time without boiling for 4-5 hours.
It is necessary
- - 500-600 g of beef;
- - 3 liters of water;
- - 500-600 g of fresh white cabbage;
- - 2 small onions;
- - 1 carrot;
- - parsley root 1 pc.;
- - celery root 1 pc.;
- - 100 g sour cream;
- - 1 tablespoon of salt (no top);
- - dill greens;
- - parsley.
Instructions
Step 1
Divide the beef into portions and place in a pot of cold water. Place the pot on the stove and cook the meat until half cooked for thirty minutes.
Step 2
While the meat is cooking, prepare the required ingredients. Cut the cabbage into large strips and cover with boiling water. Blanching cabbage is done to create a protective film on the surface of the cabbage leaves, which will prevent them from overcooking. After 20-25 minutes, place the cabbage in a sieve or colander and let cool. Chop the onion, celery and parsley roots not very finely, grate the carrots.
Step 3
Remove the meat, wash it in warm water, and strain the broth through cheesecloth folded in half or through a fine mesh sieve. Pour the broth back into a clean, washed saucepan.
Step 4
Put cabbage, carrots, onions, roots, pieces of meat in the broth and cook without boiling for 4-5 hours. Season with salt to taste thirty minutes before the end of cooking.
Step 5
Add a teaspoon of sour cream to a plate with ready-made cabbage soup. To add beauty to the dish, garnish with dill and parsley.
