Curd creams are delicious and nutritious. They are a wonderful decoration for cakes and pastries. But they can be served as a separate dish. First of all, this applies to the so-called dessert creams. They are usually prepared from cottage cheese with the addition of various components: fruits, nuts, chocolate.
Recipe for lemon curd cream for cake
To make lemon curd cream, which is used to decorate baked goods, you will need:
- 500 g of cottage cheese;
- 400 ml heavy cream;
- 3 tbsp. l. granulated sugar;
- 1 tbsp. l. gelatin;
- 2 lemons;
- 1 tbsp. l. lemon peel.
Pour 2-3 tablespoons of water over the gelatin and leave to swell for an hour. During this time, wipe the cottage cheese through a sieve (if the cottage cheese is dietary, then you do not need to wipe it). Squeeze the juice from the lemons, and chop the zest with a knife or rub on a fine grater. Then stir the curd with granulated sugar, lemon juice and zest. Place the swollen gelatin in a water bath or low heat and heat until completely dissolved. Then cool it down. Whip the heavy cream with a mixer or blender until thick and fluffy. Then carefully mix them with the lemon-curd mass, add the cooled gelatin in a thin stream and mix everything gently.
Lemon curd
The cream prepared according to this recipe is served as a dessert. It will require the following components:
- 500 g of cottage cheese;
- 2 yolks;
- 4-5 st. l. granulated sugar;
- zest of 1 lemon;
- 2 tbsp. l. raisins;
- 200 ml heavy cream;
- 2 tbsp. l. flour;
- vanillin.
First of all, rub the cottage cheese through a sieve and mix with the cream, add 3 tablespoons of granulated sugar. Add washed raisins, flour, and lemon zest. Mix everything thoroughly and heat the mass over low heat, stirring occasionally, until the flour is brewed. Grind the egg yolks white with the remaining granulated sugar (2 tablespoons), add the vanillin, mix with the curd mass and remove from heat. Place the lemon curd in the bowls, chill and serve with any sweet sauce or fruit.
Fruit with lemon curd cream
To make this delicious and delicate dessert, you will need:
- 3 apples;
- 3 oranges;
- 2 bananas;
- 750 g of cottage cheese;
- ½ glass of milk;
- 7 tbsp. l. honey;
- 7 tbsp. l. lemon juice;
- 6 tsp vanilla sugar;
- 3 tbsp. l. chopped hazelnuts.
Peel the apples, cut into 4 parts, remove the core and cut the pulp into wedges. Peel the oranges, divide into slices, peel off films and seeds. Collect the released orange juice in a separate bowl. Cut the peeled bananas in half lengthwise and then crosswise. Mix 4 tablespoons of honey with the same amount of lemon juice in a bowl. Then toss all the sliced fruits into the honey-lemon mixture.
Whisk the cottage cheese with milk, vanilla, collected orange juice, the remaining honey and lemon juice. Gently stir more than half of the fruit into the lemon curd cream and place in transparent glass vases. Top with remaining fruit and sprinkle with finely chopped hazelnuts. Hold the prepared cream in the refrigerator before serving.
