Step 1

Separate the whites from the yolks. Place them in a bowl, cover it and refrigerate. Mash margarine with sugar until smooth. Salt. Then, stirring constantly, add the yolk one at a time.

Step 2

Rub the curd through a sieve and combine it with the prepared mass. Grate the lemon zest on a fine grater and cut the pulp into small pieces. Mix baking soda with lemon and zest and add the mixture to the curd and egg mass. Add flour and knead the dough.

Whisk the cooled egg whites into a firm foam. Add them to the dough, one spoon at a time, stirring gently. Grease a muffin tin with butter and place the dough in it. It should occupy 2/3 of the total volume.
