Cheesecake is one of the most popular desserts in North American and European cuisines. It is a cake with a shortbread or biscuit base, covered with a sweet cream cheese filling. You can also make cheesecake with the addition of cottage cheese - it will turn out no worse.

- For the basics:
- 150-200 g of Yubileinoye-type friable shortbread cookies;
- 80 g butter.
- For filling:
- 450 g cream cheese;
- 150 g of cottage cheese;
- 120 g sugar;
- 100 g sour cream with a fat content of at least 20%;
- 2 eggs;
- 1 teaspoon of wheat flour;
- 1 lemon;
- vanillin.
Instructions
Step 1
Break the cookies with your hands into a deep bowl and use a wooden mash to mash them into small crumbs. You can also grind the cookies in a meat grinder, food processor, or use a rolling pin.
Step 2
Place the butter in a ceramic bowl, microwave and heat until melted. Add to shortbread and stir until smooth.
Step 3
Cover the round split form with baking paper and lay out the cookies, tamping the layer with a tablespoon. If you wish, you can also make biscuit bumpers. Place the dish with the base in an oven preheated to 170 ° C and bake for 10 minutes.
Step 4
Put cream cheese in a deep bowl along with cottage cheese, granulated sugar and flour, add vanillin on the tip of a knife. Wash the lemon thoroughly, remove the zest with a fine grater, add to the cheese filling. Cut the lemon in half and squeeze 1 tbsp. a spoonful of juice. Pour into the filling. Whisk with a mixer at low speed.
Step 5
Add eggs and sour cream. Whisk the mixture again and place on the cookie base. Bake in the oven for 40-50 minutes. After finishing baking, cool in the oven with the door open. Refrigerate for at least 3 hours.
