Fresh white cabbage is very healthy - it contains fiber and valuable amino acids. This vegetable is indispensable for cooking cabbage soup and side dishes, but you can make other unusual dishes from cabbage, for example, dumplings or casseroles.

Cabbage dumplings

Try to cook a delicious and unusual second dish - cabbage dumplings. They are very tender and are served with melted butter and breadcrumbs.

You will need:

- 800 g of fresh white cabbage;

- 3 eggs;

- 2 tablespoons of crushed crackers;

- 3 tablespoons of semolina;

- 80 g of butter;

- salt to taste.

Select a small young head of cabbage, cut the stalk and remove the top leaves. Cut the cabbage into large chunks and boil in salted water until soft. Drain the vegetable in a colander, let the water drain, and then place the cabbage under the oppression.

Separate the yolks from the whites. Pass the cabbage through a meat grinder, mix with semolina, yolks and salt. Whisk the whites into a strong foam. Add them to the cooled cabbage mixture and stir gently.

Boil salted water. Take a little cabbage mass with a teaspoon and put it in boiling water. Run the spoon along the bottom of the pot to keep the dough from sticking.

If the dumplings are soft, add 1 more tablespoon of semolina to the dough.

The dumplings are boiled for about 15 minutes. When they come up and grow in size, catch them with a slotted spoon, cool, put them on a dish. Pour melted butter on the dumplings and sprinkle with toasted crushed breadcrumbs.

Cabbage casserole

This simple yet effective dish can be prepared for Sunday lunch. It turns out satisfying, but light.

You will need:

- 1 kg of white cabbage;

- 0.5 stale loaf;

- 1 glass of milk;

- 4 eggs;

- 1, 5 tablespoons of butter;

- 1 large onion;

- 5 tablespoons of crushed crackers;

- 150 g of spicy cheese;

- salt and ground black pepper.

Do not use bread crumbs, but homemade crackers, dried in the oven and crushed in a mortar. The dish will be much tastier with them.

Chop the onion and fry in butter until transparent. Cut the loaf into slices and soak them in milk. Boil the cabbage in salted water until soft, after cutting it into large pieces. Pass it through a meat grinder along with the loaf and onions.

Cool the cabbage mass and mash it with egg yolks, half a serving of rusks, salt and pepper. Beat the whites and add portions to the mixture. Grease a refractory mold with oil and lay out the cabbage mixture. Place the pan in an oven preheated to 180 ° C and bake for 15 minutes.

Grate the cheese on a fine grater and mix with the remaining breadcrumbs. Sprinkle them over the casserole and return to the oven for another 7 minutes. Remove the finished dish from the oven, cool slightly and cut into pieces. Serve with fresh sour cream.
