Squids are rightfully called "sea ginseng". It is a dietary seafood with a high content of easily digestible protein, rich in extractive substances such as taurine, lysine, arginine. There are many recipes for making squid. They are boiled, fried, pickled, dried; used for cooking minced meat, a component of salads and as a main hot dish.

Squid stewed with peppers and sesame seeds

To cook hot squid according to this recipe, you need to take:

- 550 g squid;

- 3 ½ tbsp. l. sesame;

- 1 onion;

- 7 tomatoes;

- 2 cloves of garlic;

- 2 red bell peppers;

- 2 yellow bell peppers;

- ½ cup soy sauce;

- vegetable oil;

- 3 tbsp. l. vinegar;

- ground pepper;

- salt.

Fry the sesame seeds in a dry skillet. Peel and cut onions into thin half rings. Scald the tomatoes with boiling water, peel them off and cut into small slices. Wash the bell pepper and, after removing the stalks with seeds, cut into strips about a centimeter wide. Peel the squid, cut into rings, salt and pepper.

Then fry the onions until golden brown, add the bell peppers and fry the vegetables together for 5 minutes. Then add the prepared tomatoes, chopped garlic cloves, add soy sauce and vinegar and, stirring occasionally, bring to a boil.

Heat the oil in a separate bowl and fry the squid rings in it for a couple of minutes. During this time, the squid should turn white. Then fill them with the prepared sauce, add the fried sesame seeds, season with salt and pepper to taste and simmer for 5-10 minutes.

Stuffed squid

To prepare stuffed squid, you will need the following products:

- 10 carcasses of medium sized squid;

- 9 tbsp. l. rice;

- 2 carrots;

- 2 heads of onions;

- 450 g of champignons;

- parsley greens;

- pepper and salt to taste.

For the sauce:

- 250 ml cream;

- 100 ml of milk;

- 3 tbsp. l. flour;

- 3 tbsp. l. butter;

- juice of ½ lemon;

- 4 tbsp. l. grated cheese;

- salt.

First of all, make the mince. To do this, sort and rinse the rice. Cook it in salted water until tender. Peel carrots, onions and mushrooms, chop finely and fry until soft in vegetable oil. Wash the parsley, pat dry on a paper towel and chop with a knife. Combine cooked rice with fried vegetables and mushrooms, add parsley. Salt and mix everything thoroughly.

To prepare the sauce, lightly fry the flour in butter, then pour in the milk and, stirring continuously, bring to a boil. Add grated cheese, then pour in the cream, lemon juice. Season the sauce to taste with salt and stir well.

Clean the insides of the squids, then put them in boiling water for 1-2 minutes, then rinse them in cold water and remove the remnants of the films. Fill the squid carcasses with cooked minced meat, place on a baking sheet or in a fireproof dish, cover with creamy sauce and bake in the oven for 30 minutes at 180 ° C.
