Arnatutka is a cereal named after the type of wheat from which it is made. It is a spring wheat variety with high quality hard, white grain. In Dahl's dictionary, it is noted that the Turks who conquered them called the Albanians Arnauts; the Christian "white" troops, or special forces, as they would say now, consisted of Arnauts.

- For an arnout on the water:
- 1 tbsp. arnautki;
- 2 tbsp. water;
- 1 tbsp butter;
- salt.
- For fried porridge:
- 2 tbsp. arnautki;
- 5 tbsp. water;
- 2 tbsp butter;
- salt.
- For a sweet arnaut:
- 2 tbsp. arnautki;
- 3-3.5 Art. milk;
- 3-5 tbsp honey;
- 50 g of walnuts.
Instructions
Step 1
Arnautka on the water
Pour water into a saucepan so that the water takes up no more than ¾ of its volume, bring to a boil, salt. Rinse the cereals thoroughly, add to boiling water, add oil and cook for 20 minutes, stirring constantly, so that the porridge thickens. Remove the porridge from the heat, close the lid, wrap it tightly with a towel and let the porridge stand for 15-20 minutes.
Step 2
"Fried" porridge
Sort out and rinse the cereals, drain the water thoroughly, pour water into a saucepan, put on fire, salt and wait until it boils. Take a dry and clean frying pan, put on fire and pour the cereal on it, fry over medium heat, stirring constantly, until the cereal changes color a little and dries out. Make sure that the groats do not burn.
Step 3
Pour cereals into boiling water gradually, using a tablespoon - one spoon at a time, no more. Stir when pouring all the cereals into the water. Reduce heat to low and cover the saucepan, but not very tightly to allow steam to escape. Wait until the water boils off and put 2 tablespoons of butter in the porridge, stir, remove from heat, close the lid tightly, wrap with a towel and let the porridge stand for 20 minutes.
Step 4
Sweet arnautka
Go through and rinse the arnautka, take a cast-iron cauldron, put it on medium heat, add the cereal and fry slightly, stirring constantly: the cereal should dry out and change color a little, but in no case burn. Reduce heat to low, pour milk in a thin stream, stir, cover with a lid.
Step 5
Sort out the nuts, scald with boiling water, peel off, dry thoroughly, chop coarsely. Put honey in the porridge when it absorbs most of the milk and is almost ready, stir thoroughly, cook for a couple of minutes. Remove the porridge from the heat, add the nuts, stir, close the lid tightly, wrap with a towel and let stand for another 5-10 minutes.
