Step 1

Take fresh young juicy meat. It doesn't have to be steamed or ice cream. Veined meat is also not suitable for kebabs. Cut the meat into small pieces.

Place the chopped meat in an enamel bowl and marinate. To do this, sprinkle it with black pepper, barbecue seasonings, add finely chopped onions.

Lamb - rosemary, cloves, ginger.

Pork - coriander, sage, marjoram, ginger.

Veal - ginger, tarragon.

Chicken, duck - thyme, tarragon.

Goose - nutmeg, cumin, thyme.

Cumin and basil, according to experts, can be added to kebabs from all types of meat.

You can soak a kebab in lemon juice, wine, kefir, mineral water. Toss the meat with the marinade.

Cover the dishes with a lid and place in a cold marinating place for several hours.

After 2-3 hours, salt the meat and stir.

Light a fire, wait until the fire is completely extinguished. There should be a lot of coals and they should give a good heat.

Use hardwood firewood to grill the kebab. Firewood containing tar will spoil the taste of the dish. Ready-made charcoal can be used.

String the pieces of meat on a skewer, interspersed with onions, cut into rings. Small dense tomatoes, bell peppers or eggplants can be placed in large thick rings between the pieces of meat. Vegetables can be marinated with meat or used fresh. Wash them first, you do not need to remove the seeds from the pepper.

Step 7

Grill the kebab over hot, no fire, coals on the grill for 15-20 minutes, turning so that the meat is evenly browned. Place the meat over the coals at a height of 4-5 centimeters or lower. If there is no barbecue, fold it out of an improvised non-combustible material - brick, stones.

Sprinkle wine over the meat while frying. This will add juiciness to it.

Step 8

Serve pickled onions chopped into rings, greens to the barbecue. A variety of hot sauces work well.
