Cut the tomatoes into quarters and then crosswise. Chop all the greens, peel, grate the garlic cloves on a fine grater and combine everything in one bowl. In a separate small bowl, combine the vinegar and olive oil and whisk well. Sprinkle the salad with the indicated spices, grated lemon zest, salt, season with the sauce and stir, but very gently so as not to turn the tomatoes into porridge.

- 4 eggplants;

- 4 yellow or red bell peppers;

- 4 tomatoes;

- 1 small chili pepper;

- 4 cloves of garlic;

- 50-100 g of cilantro;
