Cheese week is coming to an end - Shrovetide. For a change, you can make pancakes by adding raw potatoes to the dough. It will turn out satisfying and tasty.
It is necessary

- - soda - 0.5 tsp
- - ground flax seeds - 2 tablespoons

Step 1
For thin pancakes, take raw potatoes. Tubers should be medium in size or slightly larger than medium. Wash the potatoes thoroughly, peel them and rub on a fine grater to make a delicate puree.
Step 2
Add soda and salt, ground flax seeds to the potatoes. Mix the mixture well and leave to stand for 1 - 2 minutes. This is necessary so that the flaxseed is saturated with moisture and becomes viscous, acquiring the consistency of a raw egg white. Now you need to beat the mass a little with a fork, pour in half a portion of water and stir thoroughly.
Step 3
Gradually, stirring, add all the flour, pouring in the remaining water in small portions. You may need more or less water, depending on the quality of the flour. Having achieved the required consistency of the dough, you can add vegetable oil, mix again and start baking the pancakes.
Step 4
Potato pancakes are baked in a hot frying pan, greasing with oil as needed, pouring small portions of the dough and evenly distributing it over the surface. Bake over low heat so that the pancakes dry properly, then it is easier to turn them over.
