For dough, you need warm water or milk, yeast, flour and sugar. The yeast must be fresh. Usually, at least 35 and no more than 50 grams of yeast are taken per kilogram of flour.

Dissolve yeast in one glass of water or milk, add a teaspoon of sugar, mix well and put in a warm place for half an hour.

Step 4

Prepare the utensils for mixing the dough. An enamel or wooden vessel is best suited for this.

Step 5

Heat water or milk to about 30 degrees.

Step 6

Dissolve the yeast in water and add half of the flour prepared for kneading.

Step 7

Cover the dishes with dough with a napkin or towel and place in a warm place for fermentation. The fermentation time of the dough will depend on the density of the batch, the quality of the flour and the amount of yeast, as well as the air temperature. If the dough rises too quickly, it must be stirred and moved to a less warm place.

Step 8

Subject to all these rules, the dough will ripen quickly. It should almost double in volume and its surface should be covered with bubbles. It is these bubbles that are a sign that the dough is ready. As soon as it begins to settle, knead the dough.
