Shrimps are added to salads, sauces, grilled dishes and even soups are prepared with them. Mushrooms, cheeses, cream, spicy herbs and other ingredients go well with the delicate taste of seafood. Shrimp soups cook quickly and can be thin or thick, spicy or very tender.
Shrimp and mushroom soup
Try this simple and nutritious creamy mushroom and shrimp soup. To do this, you will need:
- 250 g of peeled shrimp;
- 1 large onion;
- 500 ml of cream;
- a pinch of grated nutmeg;
- 1 tablespoon of sugar;
- 150 g of champignons;
- 0.25 glasses of dry white wine;
- a few sprigs of cilantro;
- lemon juice;
- salt to taste;
- vegetable oil for frying.
Chop the onion. Pour some vegetable oil into a saucepan and, stirring occasionally, fry the onion in it until transparent. Pour sugar into a saucepan and pour in wine, stir. Simmer the mixture over the fire for about 3 minutes. Rinse the mushrooms, dry and cut into plastics. Put them in a saucepan, top with cream, add grated nutmeg. Bring the mixture to a boil and cook for a few minutes. Then dilute the soup with water to the desired thickness.
Instead of water, the soup can be diluted with chicken or vegetable broth.
Bring the mixture to a boil again, put the peeled shrimp in a saucepan, add a little lemon juice and salt. Reduce heat and cover soup. Boil it for 5 minutes, then remove from heat and pour into bowls. Sprinkle each serving with finely chopped cilantro before serving.
Shrimp Cheese Soup
Soup according to this recipe can be made in a quarter of an hour.
You will need:
- 1.5 liters of water;
- 4 medium sized potatoes;
- 1 carrot;
- 150 g of processed cheese of the "Yantar" type in a can;
- 300 g of unpeeled shrimp.
Boil the shrimps for 5 minutes. Remove them with a slotted spoon, clean. Cut the potatoes into small cubes, grate the carrots. Put the potatoes in the shrimp broth, after 5 minutes add the carrots to it. Cook vegetables until soft.
Add the melted cheese and shrimp to the saucepan. Cook the soup for another 3-4 minutes. Then pour it into bowls and serve with homemade white bread croutons.
Shrimp and tomato puree soup
You will need:
- 300 g of peeled shrimp;
- 150 g ripe tomatoes;
- 100 ml of cream;
- 0.5 onions;
- 600 ml of chicken broth;
- 0.25 teaspoon ground paprika;
- salt;
- freshly ground black pepper.
Blanch the shrimps in boiling water, then discard in a colander. Place them in the bowl of a food processor, add finely chopped onions. Pour boiling water over the tomatoes, peel them off. Add tomatoes to shrimp and onion. Purée the mixture, gradually adding the chicken broth to it. The finished mass should swell and become homogeneous. Pour it into a saucepan and place it on the stove.
For more flavor, add a couple of tablespoons of sherry to the soup.
Bring the mixture to a boil and cook for about 10 minutes. Pour cream into the soup, add salt, paprika and cook for a couple of minutes. Sprinkle freshly ground black pepper over the soup before serving.
