This healthy soup, combined with tomato and curd sandwiches, is perfect for a diet lunch.

- For 2 servings of soup:
- 60 g soft cheese such as camembert
- 2 tablespoons buckwheat flour
- 250 ml vegetable broth
- 2 cloves of garlic
- 1 egg yolk
- 4 tablespoons of white wine (or 2 tablespoons of lemon juice)
- 10 g butter
- A little parsley or green onions
- Salt. pepper to taste
- For sandwiches:
- 2 slices whole grain bread
- 1 clove of garlic
- 2 tablespoons of cottage cheese
- 100 g tomatoes
- Basil
- Salt and pepper to taste

Step 1
We heat the butter in a saucepan and fry the buckwheat flour on it. Add broth. Cut the cheese into cubes and add to the same place. Pour wine or lemon juice into the soup. Cook on low heat for 10 minutes, stirring occasionally.
Step 2
Pass the garlic through a crusher and add to the soup. We also add egg yolk, finely chopped herbs, salt and black pepper there. We remove from the fire.
Step 3
Tomato sandwiches are served with the soup. Fry slices of bread in a toaster and rub with a clove of garlic. Cut the tomatoes into small cubes and mix with finely chopped basil, salt and pepper. First, spread the cottage cheese on the bread in an even layer, and on top - tomatoes with herbs.
