Instructions
Step 1
Set the oven rack in the center. Heat the oven to 250 degrees. While it is reaching the right temperature, wash the vegetables and dry them with a napkin.
When the oven is warmed up, put the eggplant in bake.
The baking time is 25-30 minutes.
Step 2
While the eggplant is baking, prepare the vegetables. Cut the cucumber, bell pepper and tomato into small cubes. Season with lemon juice and olive oil, add herbs, sesame seeds and mix gently.
Step 3
We take out the finished eggplant from the oven, put it on a dish, remove the peel (it can be easily removed), without removing the "tail". our eggplant will look more presentable with it!

Then we take a fork and begin to "flatten" our eggplant, trying to keep its shape, lightly salt it.
Step 5
It remains only to put the previously prepared vegetables on top of the eggplant and our dish is ready.
