Steak is usually called meat fried on coals with a minimum amount of spices. The main characteristic of this dish is the most natural way to prepare it.
The best way to cook a steak is to fry meat directly on the coals of a fire, but if you can't cook a steak over a fire, you can use the grill. A piece of meat that has been fried in a pan can hardly be called a steak.
In order to cook a steak, we need a flat piece of beef, the thickness of which does not exceed five centimeters (the weight of a portion should not exceed 700 grams), pepper, salt to taste.
• First of all, choose the right piece of meat for the steak: the beef should be cut across the grain, and the meat itself should contain small layers of fat that make it look like marble. You should not take pork to cook a steak.
• Prepare an open heat for cooking a steak: it can be a special josper oven (a kind of oven that runs on natural charcoal), an open grill, a barbecue. If you have to cook a steak at home, use a frying pan with a ribbed bottom, although the taste of such a steak may differ significantly from the canonical one.
• Rinse the meat thoroughly, dry it at room temperature, but under no circumstances beat it.
• Season the steak with salt and pepper, then place the meat on a well-heated surface. If the pan or wire rack is not heated enough, the juice will leak out of the meat, and it is unlikely that you will succeed in making the steak juicy and tender.
• Cook the steak for fifteen minutes, turning occasionally. Place the cooked meat in a warm place so that the juice evenly saturates it. Before serving, the steak is greased with vegetable oil and garnished with a vegetable side dish such as potatoes, carrots, green peas or salad.
