Shekerburs are Azerbaijani pies stuffed with hazelnuts. This pastry is traditionally prepared for a holiday called Novruz Bayram.
It is necessary
- - wheat flour - 1.5 kg;
- - sour cream - 400 g;
- - hazelnuts - 400 g;
- - milk - 200 ml;
- - water - 3 tablespoons;
- - butter or margarine - 200 g;
- - egg white - 2 pcs.;
- - sugar - 2 tablespoons;
- - dry yeast - 1 tablespoon;
- - salt - on the tip of the knife.
Instructions
Step 1
Before you start cooking shekerbourg, make a dough. To do this, pour a tablespoon of dry yeast into a clean, free bowl and cover it with water. The water must be warm. Set this mixture aside for a quarter of an hour for the yeast to come up.
Step 2
Mix pre-melted butter or margarine with warmed milk. In the same mixture, add the following components: raw egg whites, sour cream, as well as salt on the tip of a knife and granulated sugar. First add the matched dough to the formed mass, then the wheat flour. After kneading the dough well, let it rise. To do this, put it in a warm place or in a bowl of warm water for about 50-60 minutes.
Step 3
While the dough is rising, fill the shekerbur. Pour the hazelnuts into a dry skillet and fry them until golden brown. After this procedure, remove the husk from their surface - it will be removed without much difficulty. Chop the hazelnuts into small pieces and mix them with granulated sugar.
Step 4
From the resulting raised dough, make small balls. Roll each so that the diameter is 12-15 centimeters, no more. Put the filling like this: a tablespoon on one round layer. Shape the patties into a crescent shape, then fix the edges.
Step 5
After greasing a baking sheet with enough sunflower oil, place the formed pies on it. Bake them at 190 degrees in the oven until cooked through.
Step 6
Cool the baked goods before serving. Shekerburs are ready!
