Steamed trout
You will need:
- 1 kg of trout;
- salt, ground pepper to taste;

- lemon juice.
For cooking, you can take both river and sea trout.
1 kg of trout is about 3-4 carcasses of river trout. Sea trout is larger, so one small carcass weighs 1.5-2 kg. You can buy ready-made steaks right away, but then it is more difficult to determine how fresh the fish was. If you have the time and desire, it is better to take a whole fish and clean it yourself.
Carefully remove the scales from the fish, even if they were cleaned in the store. Cut off the fins and gut the entrails. Rinse under cold running water.
Rub the carcass on top and inside with salt and pepper. Cut a lemon in half and squeeze the juice from each half onto the fish. Wrap the fish in a roasting sleeve or place in a container with a lid and refrigerate for 1-2 hours to soak the fish with spices.
Instead of salt, you can use soy sauce, which will add an interesting flavor to the fish. When using the sauce, no salt is needed.
After the fish has stood in the refrigerator, you can proceed directly to cooking it in a double boiler. Remove the carcass from the roasting sleeve, if used, and place the fish on the mesh of the steamer. Sprinkle finely chopped dill on top or place a few basil sprigs.
