Fish breaded with almonds can be called the beautiful French culinary term Amandine, which means "cooked or garnished with almonds." Since almond flakes are fried very quickly until cooked, only thin fish fillets, skinless, are suitable for this recipe. You can use fish fillets such as trout, salmon, tilapia, halibut, whitefish, or flounder.
It is necessary
-
- 2 tablespoons flour
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 medium eggs
- 750 grams of fish fillet
- 1 cup almond flakes
- 50 grams of ghee
- Pan
- Three wide bowls
- Wide culinary spatula
Instructions
Step 1
Prepare three bowls.
Pour flour first.
In the second, beat eggs with salt and pepper.
In the third, add almond flakes.
Step 2
Dip each piece of fillet successively in flour, shake off the excess and dip in the egg mixture, and then dip one side and the other in the almonds. Press the fish lightly to help the almond flakes stick to the fillet.
Step 3
Melt butter in a skillet. This recipe uses ghee because it also gives the dish a subtle nutty flavor. If you don't have ghee on hand, you can replace it with olive oil.
Step 4
Fry the breaded fish on one side for 3 to 5 minutes, gently turn it over with a wide spatula on the other side and fry in the same way. Watch carefully to ensure that the almonds turn golden, but not darken.
Step 5
You can also add a little grated Parmesan cheese to this breading. To do this, you just need to mix it with almonds.
Step 6
Serve the fish garnished with lemon slices and sprigs of parsley or rosemary.
