A dish made from a bovine heart is considered a delicacy. The heart contains a large amount of various vitamins and minerals that our body needs. You can cook various dishes from it, but since the heart consists of dense muscle tissue, the best way to cook it is to stew it. If the heart is cooked correctly, then such a dish will taste great. It is necessary

    • heart - 500-600 gr;
    • flour - 1 tbsp;
    • onions - 1-2 pcs;
    • tomato paste - 2 tablespoons;
    • vinegar - 2 tablespoons;
    • sugar - 1 tsp;
    • water or broth - 2, 5 tbsp;
    • sunflower oil;
    • bay leaf - 2 pcs;
    • salt.

Instructions

Step 1

To begin with, take a bovine heart, thoroughly cleanse of films, chords and excess fat. Then rinse it several times under cold running water and pat dry with a napkin or towel.

Step 2

Then cut the heart into small square or oblong pieces and add a little salt. Take a skillet with high edges, pour refined sunflower oil over it and put it on fire. Then put the heart in a preheated skillet and fry.

Step 3

Fry the heart until crispy and do not forget to stir occasionally. Before the very end of frying, sprinkle the pieces of heart with flour, mix everything well and keep on fire for a couple of minutes.

Then place the toasted heart in a shallow enamel saucepan. Pour one glass of broth or water into the skillet where the heart was fried and bring to a boil. Let the water simmer for a few minutes and turn off the heat immediately. You have got a sauce in which the heart will be stewed further.

After that, strain the resulting sauce through a strainer and pour the pieces of heart with it in a saucepan. Add one and a half more cups of boiled water and put the pot on fire. Be sure to cover the pot with a lid. Boil the heart over low heat for two to three hours.

Step 6

During this time, get busy making pasta. Peel the onion, chop finely and fry in a pan until slightly golden in a little sunflower oil. Next, add tomato paste, vinegar, bay leaf and sugar to it. Mix everything well and leave to simmer for five to seven minutes.

Step 7

About thirty minutes before the heart is finished stewing, add the cooked pasta to the saucepan. Stir everything one last time, season with salt to taste and leave until the dish is completely cooked.

Step 8

Serve mashed potatoes, buckwheat porridge, boiled rice or pasta as a side dish. When serving, place the dish on a plate and sprinkle with finely chopped herbs on top. This dish turns out to be very tasty, tender and nutritious. Bon Appetit!
