Pork heart is made of dense muscle tissue and has a peculiar smell. To make the by-product soft, long cooking or stewing is required. But in finished form, the heart is easily cut into thin layers. It can be served as an appetizer, beautifully served on a plate, or you can make aspic, like from the tongue.

Instructions
Step 1
Slit the pork heart lengthwise and remove large blood vessels and films. Rinse with running water, try to remove blood clots as much as possible.
Step 2
Place a pot of water on a fire. If you plan to boil vegetables in broth from under the heart, put a full kettle on the other burner.
Step 3
Put pieces of offal in boiling water. No matter how well you wash your heart, there will be a lot of foam from the coagulated protein. Boil your heart for ten minutes. Remove it from the broth and pour over boiled water from the kettle. Place on a plate.
Step 4
Drain the dirty broth, wash the pan from the stuck foam around the edges. Pour in a fresh batch of boiling water from the kettle. Season with salt to taste. Place the heart in a saucepan and continue cooking.
Step 5
Remove the emerging foam with a slotted spoon. Check periodically so that the heart does not stick to the bottom of the pot, use a spoon to hook it up and turn it over.
Step 6
Cook the pork heart for about two hours. Half an hour before cooking, put a peeled small carrot into the broth. If the carrot is large, cut it into large pieces. Add a few black peppercorns, bay leaves, and parsley root. To taste, you can add allspice and the head of onion, freed from the husk.
Step 7
Cool the offal in the broth. The heart is covered in air with a dark, windy crust.
Step 8
Transfer the heart to a bowl and use it straight away for cooking. If you put the cooked heart in the refrigerator, then store it in a container with a tight lid or cover with cling film.
Step 9
Strain the remaining broth. Cook leeks, potatoes, cabbage, beans on it. Serve cooked vegetables with chopped pork heart. Sprinkle chopped herbs over the dish. Serve the sauce separately.
Step 10
Sauce.
Combine a couple of tablespoons of good tomato paste with sour cream. Take sour cream at will, the more it is, the softer the sauce will be. Dice pickles or pickles. Stir them into the sauce.
