By-products such as lungs and heart, in the hands of skilled housewives, can turn into real culinary masterpieces. Pies stuffed with lungs, potatoes with a heart or meat salad with a boiled heart are just a few of what you can cook for a family dinner in a regular kitchen.
Potatoes stuffed with hearts and vegetables
To prepare this hot meal, you will need the following items:
- 1 pork heart (1 kg);
- 8 potatoes;
- 1 large onion;
- 1 carrot;
- 3-4 cloves of garlic;
- 100 grams of sour cream (or yogurt);
- parsley;
- dill;
- turmeric;
- sunflower oil;
- salt;
- thyme.
Onions and carrots must be peeled, rinsed and chopped. Then vegetables should be sautéed in sunflower oil. The pork heart must first be cut into pieces and filled with water for a while so that all the blood comes out of it. After that, you can already grind it with a blender or cut it as small as possible. Add the chopped mass to roasting vegetables and stew.
You can not only fry the pork heart with vegetables, but also just open it halfway, and then combine with browned vegetables and also fry. Stew the vegetable mass for 40 minutes, until the heart becomes soft. Add thyme, turmeric and a pinch of salt to the filling and stir.
Potatoes for this dish must be selected even and of the same size. It should be washed, boiled in a uniform and then cooled. Remove the peel from the cold root vegetable and cut it in half. Then in each half, using a small spoon, make a depression, removing the excess pulp. On the opposite side, for stability, you can cut off the bottom.
Fill each potato half with toasted filling and place on a baking sheet. Pour over the sauce and bake in the oven for 15 minutes. Gently put the prepared stuffed potatoes on a dish, sprinkle with chopped herbs if desired. This dish can be served with pickles.
Finely chopped parsley and dill for the sauce must be mixed with chopped garlic and sour cream.
If necessary, sour cream can be replaced with unsweetened yogurt.
Making the filling from an easy pie
In order to get a delicious filling, you should take:
- 1 kilogram of pork lung;
- 5-6 large onions;
- 2 raw eggs;
- ground black pepper;
- salt.
Pork lung must be soaked a little beforehand, then drain and boil in fresh salted water. The finished product must be cooled and ground in a meat grinder along with onions, then salt and pepper, add raw eggs and mix the filling.
When boiling, the lungs greatly increase in volume, so it is recommended to boil them in a large saucepan, without filling it to the very top.
For the preparation of pies, you can use ready-made yeast or puff pastry. Pies with such a filling can be fried in a pan under the lid or baked in the oven in the usual way.
Heart salad with onions and mayonnaise
Another recipe for a delicious meal. To prepare it, you need to take:
- 500 grams of pork heart;
- 5-6 white onions;
- 150 grams of mayonnaise;
- ½ cup apple cider vinegar;
- ground black pepper.
The pork heart must first be boiled until fully cooked, and then cut into strips. White onions should also be cut into strips and covered with vinegar to eliminate bitterness. Hold the onion in this state for 20 minutes, then drain the vinegar and put the onion straws in a salad bowl.
Regular onions can be replaced with leeks, they are more tender and not as sharp as onions.
Add cooled straws from the heart to the onion, season with ground pepper and pour over with mayonnaise. A delicious and uncomplicated salad is ready.
