Salted mushrooms can be a delicious addition to a salad. They add spice to the dish and go well with eggs, peas, potatoes, boiled meat. The sauce is also important - a salad with salted mushrooms can be seasoned with yogurt, sour cream, vegetable oil or mayonnaise.
Salad with salted mushrooms and green peas
You will need:
- 400 g of salted mushrooms (preferably white or boletus);
- 4 medium sized potatoes;
- 100 g of canned peas;
- 2 medium-sized onions;
- mayonnaise;
- salt;
- freshly ground black pepper;
- a few sprigs of parsley.
Boil the potatoes in their skins, cool, peel and cut into cubes. Cut the onions into thin rings. Sprinkle salt right on the board and remember with your hands - this will remove excess bitterness from the onion and make it softer. Transfer the potatoes and onions to a salad bowl, add canned peas without liquid, and thinly sliced salted mushrooms. Sprinkle the salad with freshly ground black pepper, season with mayonnaise and stir. Garnish the finished dish with parsley.
Vinaigrette with salted mushrooms
Pickled cucumbers in this version of the vinaigrette are replaced by mushrooms - with them the usual dish acquires a new flavor nuance.
You will need:
- 2 potatoes;
- 1 medium-sized beet;
- 1 medium-sized carrot;
- 1 onion;
- 200 g of salted honey agarics;
- 100 g sauerkraut;
- vegetable oil;
- salt;
- freshly ground black pepper;
- parsley and celery.
Boil beets, carrots and potatoes, cool and peel. Cut vegetables into cubes. Finely chop the onion, chop the mushrooms. Put everything in a deep bowl, add pre-squeezed sauerkraut. Season the vinaigrette with vegetable oil, salt and pepper. Pour in finely chopped greens, mix. Let the food stand for a while, then place on plates and serve.
Salad with beef and salted milk mushrooms
This simple salad with salted mushrooms and meat turns out to be very satisfying, so the portions can be small.
You will need:
- 400 g of salted milk mushrooms;
- 2 small onions;
- 500 g of boiled meat;
- vegetable oil;
- freshly ground black pepper;
- salt;
- a bunch of green salad.
Rinse the beef fillet, remove the films and fat. Pour boiling salted water over the meat, add black peppercorns and cook until tender. Cool the boiled meat and cut into strips.
Peel the onion, cut into thin half rings. Chop the milk mushrooms thinly. Stir the mushrooms and onions and season with vegetable oil. Put lettuce leaves on portioned plates, place boiled beef and milk mushrooms mixed with onions on top. Sprinkle the salad with freshly ground black pepper.
