Sour cream goes well with fresh strawberries and prunes - this is a win-win option for a delicate dessert with a pleasant berry aroma. In addition, on a hot summer day, this soufflé perfectly refreshes, filling with energy for the whole day.
It is necessary
- - 250 g strawberries;
- - 200 g sour cream 25% fat;
- - 100 g of prunes;
- - 5 g of gelatin;
- - 5 tbsp. tablespoons of cooled boiled water;
- - 4 tbsp. spoons of brown sugar;
- - almond petals.
Instructions
Step 1
Soak gelatin in water so that it swells well. Do not take a lot of gelatin for this dessert - 5 g will be quite enough for the finished soufflé to keep its shape and turn out to be tender.
Step 2
Rinse the prunes, cover with hot water, also set aside to swell. Rinse fresh strawberries, dry, cut each berry in half, chop in a blender. With frozen berries, the soufflé will not turn out so fragrant and tender.
Step 3
Add sugar to sour cream, stir, add strawberry puree. Stir gently with a mixer at low speed. Stir in a deep container, otherwise spray will fly.
Step 4
Heat the swollen gelatin in a water bath until it is completely dissolved, strain through a sieve, add to the sour cream-berry mixture, stir well.
Step 5
Dry the swollen prunes on paper towels, finely chop. At the bottom of each bowl or portioned bowl, put a small amount of chopped prunes, pour the berry mixture, put in the refrigerator. On average, it takes about three hours to solidify the dessert.
Step 6
Decorate the ready-made sour cream, prune and strawberry soufflé as you like, for example, with almond petals, prunes and whole strawberries.
