Chopped cutlets are widespread among meat products. Almost every housewife prepares this dish not only for the festive table, but also in everyday cooking. Cutlets are made from pork, beef, poultry. Step 1

It is best to take pork and beef pulp in equal proportions for cooking cutlets. The meat should be fresh, when pressed, it should be easy to regain its shape and have a pleasant smell. Rinse the pieces under cold running water. Then finely chop the meat into pieces no more than 5 mm in length. The juiciness of the cutlets depends on how finely you cut the meat. The fat, which is part of the meat, must also be chopped. It is important to ensure that the meat is free of skin films.

Step 2

Peel the onions and cut with a sharp knife. It is advisable to do this very finely. Divide the head of garlic into cloves and peel them, chop finely. It is not necessary to chop the garlic with a knife; for this purpose, you can use a coarse grater.

Step 3

Peel and grate the carrots, then add a tablespoon of cream to it and stir. The bread must be cut into pieces and placed in a deep bowl. Pour milk there and leave to swell for a couple of hours.

Step 4

Place the egg in a cup and beat with a whisk or fork. The longer you beat the egg mass, the more airy the cutlets will be.

Step 5

After you prepare all the ingredients, you need to take out a deep bowl and put meat, vegetables, spices there. Mix the minced meat with clean hands, you can use rubber gloves. The minced meat must be mixed thoroughly, for at least 20-25 minutes, then put it on a wooden sheet sprinkled with flour and form a ball.

The resulting mass must be recaptured within half an hour. It is done this way: the minced cutlet is taken with both hands and thrown onto the board, this should be repeated at least 10 times. Then the cutlets will turn out to be airy and soft.

Step 7

Place a frying pan on the stove, pour vegetable oil there and heat it well. From the minced meat, mold the cutlets of the desired shape and fry them until a crust is obtained. During the entire roasting time, you need to turn them only once. After the red juice has ceased to stand out from the cutlets when pierced with a toothpick, they can be removed from the stove.

Step 8

Serve the patties garnished with mashed potatoes, vegetables and fresh herbs.
