Chopped cutlets are cutlets that are not prepared from minced meat, they are prepared from finely chopped meat, so the dish turns out to be juicy and tender. For the preparation of such cutlets, both chicken fillet and meat from chicken legs or breasts are ideal. Of course, instead of a knife, you can use a meat grinder, but in this case, the consistency of the minced meat will be uniform, the chicken cutlets will not turn out so tasty.
It is necessary
- For six servings:
- - 600 g chicken fillet;
- - 300 g of fresh mushrooms;
- - 150 g of white bread;
- - 150 ml of cream;
- - 50 g butter;
- - 50 ml of Madeira;
- - 20 g of green basil;
- - 2 onions;
- - 1 egg;
- - 4 tbsp. tablespoons of refined oil;
- - nutmeg, salt, black pepper, sugar.
Instructions
Step 1
Chop the chicken fillet finely with a sharp knife, salt and pepper to taste. Peel two onions, cut, fry in butter and vegetable oil until soft.
Step 2
Rinse the mushrooms, pat dry with paper towels, cut, add to the onion, sprinkle with a teaspoon of sugar, fry together for 5 minutes.
Step 3
Put white bread in a blender (remove the crust), pour in the low-fat cream, beat in an egg, add green basil, a pinch of nutmeg. Whisk these ingredients.
Step 4
In a large container, mix the chicken fillet with fried mushrooms and onions, add the egg-butter-bread mass, add Madeira, knead.
Step 5
Form small round patties, fry until golden brown in vegetable oil. Decorate the dish as you like; you can serve boiled rice as a side dish.
