  • - 2 bay leaves;

Instructions

Step 1

Clean the lumps of debris (very carefully so that the mushrooms do not crumble in your hands), divide the mushrooms into four parts: small porcini and pink mushrooms, large porcini and pink mushrooms. For salting, take waves of the same type, for example, small white or large pink ones. This will produce an evenly salted product.

Step 2

Place the mushrooms in a saucepan or bowl and cover them with cold water up to the top. Soak the waves until the mushrooms acquire elasticity, they stop crumbling in the hands with a slight pressure (the procedure takes two to three days). Be sure to change the water three to five times a day throughout the soaking period to prevent souring.

Step 3

Rinse the soaked mushrooms, fill with a liter of water and put on fire. After boiling, boil the waves for 15 minutes, constantly remove the foam during cooking. Place the mushrooms in a colander.

Step 4

Take an enamel pan (dish), put mushrooms on its bottom, and on top of them - pure currant leaves, pepper, chopped garlic, laurel leaves, cloves and salt (the amount of the last ingredient should not exceed the above proportions, otherwise the waves will turn out too salty). Fill the "composition" with a liter of boiling water, set the oppression. After the mushrooms have cooled, put them in the refrigerator for a day.

Sterilize the jar / jars (depending on the volume of the selected container), put the waves in them, then boil the brine remaining in the pan and pour the mushrooms over them. Seal the jars with boiled sterilized lids. Store the product at a temperature not exceeding 15 degrees.
