Mushroom caviar is a very unusual and tasty appetizer on any festive table. It will even be a healthy dish, provided that only edible and fresh mushrooms are selected for the caviar. It is easy and simple to prepare, and you can use it both as a sandwich with bread rolls and with tartlets.
It is necessary
- - 1 or 1.5 kg of mushrooms (champignons, honey agarics, redheads, mushrooms)
- - 1-2 large onions
- - 1 large carrot
- - salt
- - pepper

Step 1
Mushrooms must be sorted out, carefully peeled. It can be like fresh mushrooms or frozen ones. Cut into small pieces and cover with water. Cook over low heat for about 40-50 minutes.
Step 2
Peel the onions and carrots, chop finely and fry in vegetable oil until cooked. There is no need to spare oil, there should be a lot of it.
Step 3
When the mushrooms are cooked, put them in a colander and let the water drain completely. During this time, they will cool down a little and they will need to be passed through a meat grinder. The mushrooms should make a fine paste.
Step 4
Combine mushroom pasta with fried onions and carrots. Add salt and black pepper to the mass to your liking. For a "zest" you can add lemon juice to the caviar. Mix everything very well, let cool. Serve caviar on the table in a beautiful cup or make sandwiches with caviar and herbs, or spread over sand tartlets.
