Step 1
Prepare broth for stewing vegetables. Since you will be adding bacon to them, it is best to boil the pork bone broth with the meat. Place it in a pot of cold water, add the peeled and halved onion. Place the parsley root in the same place, as well as a few black peppercorns and a bay leaf. Boil the broth for about an hour and a half, skimming off the foam regularly. Season with salt in the middle of cooking. Strain the finished broth so that it becomes transparent.
Step 2
Take care of vegetables. Peel the onion and chop finely, then sauté in hot vegetable oil for 3-4 minutes. Cut the carrots into semicircles and add to the onion. Cook for another 3 minutes. Cut the eggplants and zucchini into cubes, add to the pan with the rest of the products. Put chopped garlic there. Cook for no more than 3-4 minutes. Remove from heat.
Step 3
Boil the cauliflower in boiling salted water for 5 minutes. It is advisable not to cut it, but to divide the head of cabbage into separate small inflorescences. Add the cabbage to the rest of the vegetables and cover the mixture with a glass of broth. Simmer the dish over medium heat, covered with a lid. Season the vegetables with salt and pepper a few minutes after starting cooking, add dried Provencal herbs if desired. Cook until vegetables are soft, the easiest way is to determine the degree of cooking by carrots.
Step 4
Cut the bacon into thin strips and fry. If there is a lot of fat in it, then you can cook it in a dry frying pan, the necessary fat will be melted by itself. The bacon should be crispy and crispy. Stir it with vegetables right before serving, you can cook them together, but not for long, a maximum of a couple of minutes - the bacon should not soften.
Step 5
Serve hot bacon stews. The best accompaniment to such a dish will be toast made from grain bread. Choose the lightest beverages, such as apple cider with a moderate amount of sugar.
