Truffle is one of the most expensive delicacies. In Russia, fresh truffles are quite rare - most often in the kitchens of expensive restaurants. In home cooking, they can be used canned, for example, to make Italian-style pasta.

Purchase the required components. Pasta is best chosen from Italian producers. Any shape will do - spaghetti, tagliatelle, farfalle, penne - depending on your preference. The only thing you should refrain from is pasta with additives in the dough, for example, with tomatoes, spinach and cuttlefish ink - these products will distract from the taste of truffles, the main one in the dish. Parmesan can be bought both pre-grated and lumpy. The hardest thing to find is truffle paste. Follow her to large supermarkets with a wide range of delicacies. You can choose any brand, but the chefs recommend the Italian brand Tartuf Langhe.

Melt the butter in a deep skillet. Put the truffle paste there. Cook over low heat for 5-7 minutes. Meanwhile, cook the pasta. Place them in boiling salted water. To prevent them from sticking together, you can pour a little vegetable oil into the pan. Cooking time depends on the thickness and shape of the pasta and is usually indicated on the package. For example, for spaghetti it is only 2-3 minutes, and for farfalle - 5-7 minutes. It is best to cook the pasta until it is al dente - it should be soft on the outside, and the center should remain a little hard on the inside. In this case, the pasta should not crunch.

Step 3

After cooking, drain the water immediately and transfer the pasta to the truffle paste. Stir and cook for a couple more minutes. Season with salt to taste. Serve the pasta accompanied by grated Parmesan cheese, black pepper grinders and bottles of olive oil. It is especially tasty when such oil is infused with hot red pepper.
