Truffle ice cream is made with dextrose - this is the most important sugar, which in medical terminology is called glucose. In ice cream recipes, dextrose is responsible not for the sweetness of the delicacy, but for its texture - with it, the delicacy is obtained without large pieces of ice.
It is necessary
- For six servings:
- - 2 glasses of milk;
- - 3 egg yolks;
- - 3 tbsp. tablespoons of sugar and 35% cream;
- - 1, 5 Art. tablespoons of milk powder;
- - dextrose and Truffle paste are added to taste.
Instructions
Step 1
Take a deep bowl, mix sugar, milk powder, dextrose in it.
Step 2
Heat the milk to 75 degrees, add cream with egg yolks, pour in the dry mixture, punch everything with a blender.
Step 3
Add truffle paste to the mixture to taste, mix everything again.
Step 4
Place the bowl in the refrigerator. The mixture will harden in 30 minutes.
Step 5
Now put the mixture in the ice cream machine, bring it to readiness (40 minutes) or put the mass in the freezer, but then it will take several hours to prepare the dessert, during which the mixture will need to be stirred regularly.
Step 6
Put the finished ice cream on the bowls. You can drizzle with melted chocolate, garnish with fresh cranberries.
