Olivier salad is a favorite guest of the festive feast. And certainly the New Year's menu will not do without it. This dish is a kind of ageless classic, which has been chosen by more than one generation.

It is necessary

  • - boiled potatoes (5 pieces),
  • - chicken eggs (5 pieces),
  • - boiled sausage (300 g),
  • - pickled cucumbers (3-5 depending on size),
  • - canned green peas (1 can),
  • - boiled carrots (3-4 pieces),
  • - mayonnaise (100 ml),
  • - salt

Instructions

Step 1

Boil the potatoes in the peel until cooked, do the same with carrots. We are waiting for the vegetables to cool completely and cut them into small proportional pieces.

Step 2

Cook chicken eggs in boiling water for 10 minutes, cool, peel, cut very finely, or knead with a fork.

Step 3

We also cut pickled or pickled cucumbers into small square pieces. To remove excess liquid from them, place the contents on a paper towel for a few minutes.

Step 4

Cut the boiled sausage into cubes. For a classic Olivier, Doctor's sausage is best suited. In the case when you need to reduce the calorie content of the salad, instead of sausage, you can use lean beef.

Step 5

We put all the prepared ingredients in a salad bowl, add canned green peas, after draining the brine from the jar. Stir the salad carefully so as not to crush the ingredients. Add mayonnaise and salt to taste.

Step 6

We leave the salad in the refrigerator for an hour or an hour and a half, so that it can soak well. Place the finished dish on the dishes using a serving ring. Decorate the salad with a sprig of parsley or dill and serve.
