The Prague cake is one of the most popular desserts. Despite the fact that it dates back to Soviet times, it is still loved to be served at the festive table. And all because the trio, consisting of chocolate biscuit, the most delicate cream and glaze, can be safely attributed to a win-win option. Such a treat will certainly delight those who are lucky enough to taste it.
It is necessary
- For biscuit:
- - flour - 130 g (1 glass);
- - chicken eggs - 8 pcs.;
- - sugar - 150 g (slightly less than 1 cup);
- - butter - 50 g;
- - cocoa powder - 3 tbsp. l. without a slide;
- - baking powder - 1 tbsp. l.;
- - salt - 1 pinch.
- For the cream:
- - boiled condensed milk - 150 g;
- - chicken egg - 1 pc.;
- - water - 1 tbsp. l.;
- - butter - 180 g;
- - cocoa powder - 1 tbsp. l.;
- - vanillin - on the tip of a knife.
- For impregnation:
- - sugar - 5 tbsp. l.;
- - water - 10 tbsp. l.;
- - cognac (liqueur) - 2 tbsp. l. (optional).
- For glaze (option no. 1):
- - dark chocolate - 90 g (1 bar);
- - butter - 50 g.
- For glaze (option no. 2):
- - sugar - 90 g (0.5 cups);
- - cocoa powder - 2 tbsp. l.;
- - butter - 50 g;
- - sour cream - 2 tbsp. l.
- For decoration:
- - white chocolate - 50 g;
- - a split baking dish - diameter 24 cm.
Instructions
Step 1
First you need to cook condensed milk. You can buy boiled milk at the store, but it's best to make it yourself. To do this, put a can of condensed milk in a saucepan sideways, fill with water so that it completely covers the can. Bring to a boil, then reduce the temperature to low and cook, covered, for about 3 hours. Over the course of time, you need to monitor the amount of water and prevent it from boiling away. If necessary, you will need to add boiling water.
Step 2
Let's bake a chocolate sponge cake. First of all, take chicken eggs, gently break them and separate the whites from the yolks. Drain the whites into a clean, dry dish and set aside for now. And beat the yolks together with half the sugar until a thick foam using a mixer at high speed. The mass should turn out to be light yellow. Then beat the whites with the remaining sugar until white, firm peaks appear.
Step 3
Now mix all the bulk ingredients - flour, baking powder, cocoa powder and salt in a separate bowl. After that, combine the resulting mixture with whipped yolks. Then add the beaten egg whites in portions and knead the slightly porous dough. Lastly, melt the butter in the microwave or water bath, pour it into the bowl to the dough and stir gently.
Step 4
Turn on the oven and set the temperature to 180 degrees. While it is heating, grease the baking dish with any oil and pour the dough into it. Place the mold in the oven for 35 minutes. When the cake is ready, take it out and cool at room temperature.
Step 5
While the dough is cooking, prepare the syrup to soak the cakes. To do this, put sugar in a saucepan, pour in water, and then put it on the stove and bring to a boil. After that, remove the dishes from the stove and put them in a cool place so that the syrup cools completely.
Step 6
Now let's get into the cream. Crack the egg and separate the white from the yolk. The protein is no longer useful, it can be removed. And mix the yolk in a saucepan or ladle along with 1 tablespoon of water. Now add the boiled condensed milk and mix thoroughly. After that, put the dishes on the stove and, stirring, cook the mixture until thickened. And then put it in a cool place to cool.
Step 7
Mash butter at room temperature with a fork and beat with a mixer along with vanilla. Add the prepared mass of condensed milk and yolk, as well as cocoa powder. Whisk everything together again and put the finished cream in the refrigerator for 20-30 minutes.
Step 8
While the cream is in the refrigerator, you can cut the cake that has cooled by this time. Divide it into 3 equal parts using a wide knife. Soak each of them with syrup. If you wish, you can add cognac or liqueur to it. Smear the finished cakes with cream.
Step 9
Now you need to prepare the chocolate icing. Melt the dark chocolate in a water bath along with a lump of butter. Stir constantly until smooth. When it cools a little, brush the sides and top of the cake with it.
Alternatively, you can prepare the glaze in another way: for this, put cocoa powder, sugar and sour cream in a ladle and, stirring, bring to a boil. Then cook for about a minute until thickened. Finally add the butter and stir.
Step 10
Now we will decorate the cake with white chocolate. Melt it in a water bath and place it in a cooking syringe or plastic bag. Draw parallel thin stripes typical for "Prague" on the surface of the cake. And with the help of a toothpick, you can draw any pattern to your liking.
