It is necessary

    • To prepare the first course:
    • 4 pieces of fish 200 g each
    • 2 tablespoons lemon juice
    • carrot
    • 100 g champignons
    • 100 g celery tuber
    • 50 g olives
    • 50 g pickles
    • 1 bunch of parsley
    • one eighth liter of nutmeg wine
    • one eighth cucumber pickle
    • 1 bay leaf
    • 50 g butter
    • 1 tablespoon flour
    • a tablespoon of capers
    • ground pepper.
    • To prepare the second course:
    • 5 pieces of tomatoes
    • 200 g cheese
    • 250 g celery
    • half a glass of sour cream
    • 100 g mayonnaise
    • 2 pieces of onions
    • salt
    • pepper
    • one carcass of fish weighing 1, 5 - 2 kg.

Instructions

Step 1

Take chunks of fish and wash them thoroughly with cold water. After pre-drying the fish, rub with salt and sprinkle with lemon juice. Leave it like this for about one hour.

Step 2

Peel the celery and carrots well and cut them into small cubes. Then also peel and finely chop the mushrooms. Do the same with cucumbers and olives, after removing the seeds from the olives. Wash and chop the parsley leaves as well.

Step 3

Mix together and bring to a boil the cucumber pickle, wine and one-eighth of a liter of water, add the parsley and bay leaf.

Step 4

At the end of all these processes, rinse the fish again with cold water, blot with a napkin and put in the prepared broth. Simmer grass carp for about 20-25 minutes. Then remove the fish and place on a large platter.

Step 5

Heat 30 g of butter and put celery and carrots in it to stew for five minutes. Then add cucumbers, olives and mushrooms to this mixture, mix all the ingredients and simmer a little more.

Step 6

Strain the fish broth through a sieve and, adding capers to it, put on the fire for another 5 minutes. Then add there the premixed flour with 20 grams of butter and the resulting sauce of mushrooms, olives and cucumbers and cook, stirring the composition thoroughly, until thickened.

Step 7

Season the sauce with salt and pepper to taste and pour over the fish. Serve hot.

Step 8

To cook grass carp with vegetables, wash the fish by removing the gills. To remove all the insides, make an incision in the head area and pull out everything unnecessary through it. After all the excess from the fish has been removed, rinse it again. Season lightly and season with salt on the outside.

Step 9

Prepare the filling. To do this, cut into small cubes and mix celery, tomatoes, onions. Pour the resulting mixture with sour cream and add salt.

Step 10

Put the resulting minced meat in the belly of the fish and place it on a baking sheet, previously oiled. Grease the fish with mayonnaise on top.
