Cold soup made from yogurt and stale rye bread. Cut 100 grams of black bread into small pieces, dry in the oven (but do not brown). Cool, pour 200 ml of yogurt or kefir, sprinkle with sugar, you can sprinkle with cinnamon, if you like this spice. A very healthy dish!

Hot sandwiches. Cut dry black bread into slices about 1 cm thick and fry in butter (2 tablespoons). On fried bread, lay out pieces of tomatoes, cover with chopped herbs, grated cheese and put for a short amount of time (up to 10 minutes) in an oven preheated to 180 C. You can grate the bread with garlic and put canned fish and sliced cucumber on top of it. Then these sandwiches do not need to be additionally baked in the oven. The filling can be made differently, depending on what is in the refrigerator.

Croutons salads. We have been using such salads for a long time in our daily and holiday menus. But for these purposes, you can also use dried bread. This will shorten the cooking time and reduce the cost of the dish. We prepare croutons in advance and store them until the occasion when you need to add them to salads.

Favorite croutons. The recipe is simple. Break 1 egg into a deep plate, beat with 1 tbsp. a spoonful of sugar. Add a little milk, mix thoroughly. Cut the stale bread into slices about 1 cm thick. Preheat the frying pan, pour in vegetable oil. Slices of bread are alternately immersed in the egg-milk mixture, slowly turning over so that the milk is absorbed into the loaf. Put in a frying pan and fry the croutons on both sides until golden brown. Serve while the croutons are hot.

Kvass. Another way to use dried bread is to make kvass. This kvass will remind us of the taste of childhood. You will need: stale rye bread - 1 kg, water - 7 liters, sugar - 0.5 cups, yeast - 1/3 sticks, flour - 2 tablespoons. Cut the bread and fill it with boiling water. Cover the pan with a lid and leave for 4-5 hours. We prepare the yeast in advance: we dilute it in warm water with the addition of flour and let it stand for 1 hour

After that we filter the bread infusion and add prepared yeast and sugar. We put the kvass preparation in a warm place and wait for about 5 hours, and then cool it down. We store ready-made kvass in a cool place in closed bottles. You can use kvass as an independent drink or for making okroshka.
