Sun-dried tomatoes are distinguished by their rich tomato flavor and original appearance. You can cook them yourself, but it's much easier to purchase ready-made tomatoes that are canned in oil. A variety of Mediterranean-style salads are prepared with sun-dried tomatoes, as well as pasta, pizza and other interesting dishes.

Sun-dried tomato salad

You will need:

- 150 g sun-dried tomatoes in oil;

- 200 g mozzarella;

- a handful of pitted olives;

- a bunch of endive;

- 0.5 red onion;

- 2 cloves of garlic;

- olive oil;

- balsamic vinegar;

- fresh herbs (basil, marjoram, oregano);

- salt;

- freshly ground black pepper.

Rinse and dry the lettuce leaves. Tear them into large pieces with your hands and place them on a flat dish. Cut the sun-dried tomatoes into strips and place on the salad. Cut the mozzarella into cubes and the onion into thin rings. Place whole olives and mozzarella cubes on top of the tomatoes. Place the onion on top.

In a bowl, combine olive oil, balsamic vinegar, salt, black pepper, and chopped herbs. For flavor, you can add the oil in which the tomatoes have been canned. Pour the sauce over the salad and serve with fresh white or whole-grain bread.

Pizza with sun-dried tomatoes and mozzarella

Try a simple but tasty pizza with sun-dried tomatoes and mozzarella. The dish turns out to be hearty, but moderately high in calories.

You will need:

- 250 g wheat flour;

- 120 g sun-dried tomatoes in oil;

- 150 g mozzarella;

- fresh basil;

- 2 tbsp. tablespoons of olive oil;

- a handful of pitted olives;

- dried oregano;

- 4 tbsp. spoons of water;

- 0.5 teaspoons of salt;

- freshly ground black pepper.

Remove the sun-dried tomatoes from the jar and cut into small pieces. Sift flour, mix it with salt, water and olive oil. Knead the dough, place it on a floured board and knead until it turns into a smooth ball that falls well off your hands. Roll the dough into a tortilla and place on a baking sheet.

Grease the cake with olive oil, prick in several places with a fork. Spread thinly sliced mozzarella, whole olives and sun-dried tomato slices over the surface. Sprinkle the pizza with dried oregano and place in the oven at 200C. Bake until the sides of the pizza are browned. Drizzle with olive oil before serving, sprinkle with freshly ground black pepper and garnish with fresh basil.

Pasta with shrimps and sun-dried tomatoes

You will need:

- 450 g of spaghetti;

- 400 g of boiled frozen shrimp;

- 80 ml of white wine;

- 50 g sun-dried tomatoes;

- a bunch of arugula;

- 2 cloves of garlic;

- 1 lemon;

- salt;

- freshly ground black pepper.

Boil the spaghetti in salted water and discard in a colander. Heat olive oil in a skillet and sauté chopped garlic in it. Add shrimp and cook for 2-3 minutes, stirring occasionally. Pour in the white wine, add the sun-dried tomatoes cut into pieces and simmer the mixture for a few more minutes.

Add salt, freshly ground black pepper and lemon juice. Place the spaghetti and pre-washed and dried arugula in a skillet. Divide the pasta over warmed bowls and serve with chilled white wine.
