Tofu - soy cheese - is a product that does not have a pronounced taste and aroma, and therefore you can cook interesting dishes from it - from salads to desserts.
Tofu and fruits
A very interesting and, most importantly, healthy dish will turn out if you combine soy tofu, ripe bananas and juicy sweet pears.
Take one ripe banana and one ripe juicy pear. Peel and cut into slices. Cut 50 - 100 grams of tofu into slices. Place the banana slices in a single layer on a platter, top with a slice of tofu and top with the pear slices. In each of the resulting compositions, stick a canapé skewer.
The dish can be served immediately.
Momo (manti) with tofu
Make a simple dough with flour (3.5 cups), salt (0.5 tsp) and water (250 ml). Leave the dough to sit for 30 minutes, and in the meantime make the filling.
In a deep, thick-walled skillet or wok, heat a couple of tablespoons of butter, preferably ghee, add dry spices to taste and, when aroma appears, add the finely chopped onion, which must be stewed until soft. Then add 100 - 150 grams of fresh mushrooms, diced and, at the same time, diced tofu (100 - 150 grams), to taste, immediately put fresh ginger root and garlic grated on a fine grater, salt, pour a couple of tablespoons of water, continue to simmer over a quiet fire so long that there is no liquid left at all. Now it remains to add any greens to taste, after chopping it with a knife.
Divide the finished soft dough into 30 - 35 pieces and roll each into a thin cake, put a spoonful of filling in the middle and seal the edges. Steam the momo for 20 minutes.
Greek salad
You can also make a vegan version of Greek salad by replacing feta cheese with tofu.
Take bell pepper, tomato, cucumber (one at a time), a couple of tablespoons of pitted black olives and 50-100 grams of tofu. Coarsely chop peeled peppers, tomato, cucumber, tofu and olives, stir, salt and season with vegetable oil.
Eggplant and tofu salad
Take a large eggplant, peel it, cut it into medium or small cubes, then fry in oil (1 tablespoon) for 5 minutes. Add minced or finely grated garlic (1 wedge), 150 grams of diced tofu, finely grated peeled tomato, salt to taste, add 1 tbsp. soy sauce, simmer for a minute and remove from heat. Chill for 15 minutes in the refrigerator.
Sweet tofu cream
Take a 200 gram bag of soy cheese, mash in a bowl, add 2 - 3 tbsp. honey, 1 ripe banana, broken into pieces. Wipe with a blender and whisk, adding a little water or soy milk if necessary.
This cream can be served as a stand-alone dessert or used as a layer of cakes and pastries. In such a cream, you can add chopped nuts or coconut, grated citrus zest or fresh berries.
