A delicious and unusual appetizer is a salty cake. It is served at buffets and banquets, it is made from ready-made bread, unleavened or puff pastry. You can make a snack cake with a wide variety of fillings - fish, smoked meats, canned or fresh vegetables, seafood, and caviar.
Salty cake with fish and caviar

- 2.5 cups wheat flour;
- 400 g sour cream;

For filling:
- 300 g of lightly salted salmon;
- 300 g butter;
- 350 g of red caviar;
- 4 yolks of boiled eggs;
- 200 g of green salad.
Salmon can be replaced with trout or red salmon.
Prepare the cake base. Separate the yolks from the whites and rub them with salt in a spacious bowl. Add sifted flour and sour cream to the eggs one at a time. Whisk the whites into a strong foam and carefully combine with the yolk mass, stirring from top to bottom.
Cover a deep round shape with oiled paper and place the dough in it. Place the dish in an oven preheated to 150 ° C and bake until tender. Remove the biscuit from the mold, refrigerate and cut into three layers. It is convenient to do this with a special string knife.
Take care of the stuffing. Mash the hard-boiled egg yolks with butter and brush the crust with the resulting cream. Slice lightly salted salmon thinly, set aside a few pieces. Spread the fish in a continuous layer on top of the oil. Spread the cream on top again. Place the second cake layer, brush with oil and cover with fish. Apply a layer of oil to the salmon and cover with the remaining circle. Place plastic wrap on the cake, place a small plate on top and place the structure in the cold for several hours.
It is convenient to use ready-made fish slices for the cake.
Cake decoration and serving
Pound the red caviar in a mortar, rub through a colander and mix with the remaining oil. You will get a homogeneous mass of pale pink color. Remove the plate with the weight and the film from the cake, put the cream with caviar in a pastry bag. Decorate the sides of the product with a patterned tube, and make a grid on the surface of the cake with a thin smooth tube. Roll the set pieces of salmon into rolls, wrap them in the leaves of washed and dried lettuce. Place the resulting bouquets in the cages of the trellis.
The cake can be decorated in a different way - for example, by making a grid of thin strips of salmon, and placing boiled and chilled shrimps in the cells.
The snack cake needs to be cut properly. Use a sharp knife to cut a circle in the center and divide it into 8-10 pieces. Cut the main part in the shape of a ring into even, equal pieces. Serve the cake assembled by dividing it into portions right on the table.
