At all times, chicken broth has been used as a source of vitamins, minerals, fats and carbohydrates. It was given for colds and flu, for a hangover or infection for medicinal purposes.
To cook a delicious broth, you need to choose the right one: a chicken carcass or fillet, dishes for its preparation and outline the period of use of the semi-finished product.
Poultry is usually selected from chilled options (not frozen). It is boiled as a whole carcass, and only the breast is used.
For a better and more shelf-stable broth, it is better to take glass or ceramic dishes. Since metal containers, during the cooking process, they release metal ions into the broth, which reduces its shelf life.
Depending on the time of use of the broth, spices are added in different ways. So, if it will be used directly as a first course and immediately, then you can add various seasonings, herbs and vegetables. If you want to keep it for several days, it is advised not to overdo it with spices.
It is equally important to properly cool the finished broth. Prolonged thermal cooling accelerates the penetration of microorganisms, so it is recommended to put the container with the broth in ice water.
- Immerse the bird in a bowl of water for 10-15 minutes, rinse, remove and leave on a sieve to drain the water.

Important. If a thin coating appears on the surface of the broth, its color and smell have changed, then it is better not to eat it.
Freezer storage
This is the longest way to save the workpiece for later use. Frozen broth is used directly in pure form or soup is prepared, included in the preparation of pies and lagman. In order to properly freeze chicken broth, you must adhere to the following rules:
- quickly cool and remove the top layer of fat;
- filter the liquid from spices and pieces of meat;
