Wash the eggs, separate the yolks from the whites and beat the yolks with 100 g of butter, gradually adding 150 g of granulated sugar during the whipping process. Sift flour with starch, cinnamon, cocoa and baking powder. Peel the pistachios and chop finely.
Add alternately 1 tablespoon of the flour and grated chocolate mixture to the whipped mixture, stirring constantly. Add 2/3 chopped pistachios. Beat the whites, combine with the dough, mix. Wash the apples, peel, cut each into 4 pieces, remove the core, make a few cuts in the skin. Heat the oven to 180 ° C, grease a baking dish with butter or fat, put the dough in the mold, press apples into the dough on top, pour a little melted butter and cook for 40 minutes. Serve sprinkled with the remaining 1/3 of the chopped pistachios.
